Orange-Pecan Salmon

I found this recipe in a Taste of Home magazine I was looking through one day. I make salmon at least once a week and am always looking for new ways to have it. This is absolutely my favorite salmon dish I make at the moment. It is sooo easy and tastes like you would have gotten it in a restaurant. Very impressive to make for company!


Orange-Pecan Salmon
1 C. Chopped Pecans, Toasted
1 C. Orange Marmalade
1/2 C. Reduced Sodium Soy Sauce
1/4 Tsp. Salt
1/4 Tsp. Pepper
4 Salmon Fillets (6 oz. each and about 1 inch thick)

1. In a small bowl, combine the first five ingredients. Pour 1 cup marinade into a large Ziploc bag.  Add the salmon; seal the bag and turn to coat.  Refrigerate for up to 30 minutes.  Set aside remaining marinade.
2. Drain and discard marinade from salmon.  Place salmon in grease 11-in. X 7-in. baking dish.  Bake, uncovered, at 350 degrees for 20-25 minutes or until fish flakes easily with fork.
3. In a small saucepan, bring reserved marinade to a boil; cook until liquid is reduced to 3/4 cup. Serve with salmon

I love this with Jasmine Rice and a mixed veggie side. I hope you love this as much as I do!!!
